It’s been a while since my last post. Like many other college students, I spent the first few weeks of school figuring out my schedule for the semester. Unfortunately, I was unable to update my blog in between all of the classes, club meetings, and responsibilities I had. With little time to cook, I had to use recipes that were quick, yet tasty.
I’ve come to realize that there are recipes that you try once and there are also recipes that you use over and over again. This teriyaki honey-glazed salmon recipe falls under the latter. About a year ago, my friend Carmen introduced me to this recipe. Since then, I have used it frequently because of its convenience and simplicity. Here are the ingredients I used:
Teriyaki Salmon (with sweet potato fries, broccoli, quinoa and egg(s))
1/2 cup quinoa
Nori Rice Seasoning
Kikkoman Teriyaki Baste and Glaze: with Honey and Pineapple
8 oz Salmon
2 crowns of broccoli
2 sweet potatoes
So it begins.
I began by first preheating the oven to 400. Then, I began boiling 1/2 cup of quinoa. Quinoa is a great complex carb loaded with protein. It’s comparable to brown rice, yet its quicker when you are not interested in making huge batches of carbs. Bring it to a boil and then turn the heat to low. Let it cook for 20 more minutes. It will have a fluffy texture when it is finished.
Then , I poured a generous amount of Kikkoman Teriyaki Sauce onto the salmon and topped it off with Nori Seasoning. That’s it for preparation! Bake the salmon for 30 minutes.
I also decided that I wanted to pair my salmon with roasted broccoli. I placed the broccoli on a baking pan over aluminum foil and drizzled it with some olive oil. I also seasoned it lightly with black pepper and salt. Bake the broccoli for 20 minutes.
I also had a sweet potato fries craving… I cut the sweet potatoes up into thin 1-inch thin slices and seasoned it with McCormick’s Steak seasoning. Don’t mind that we are seasoning vegetables with steak seasoning, it is delicious with everything. Bake the fries for 20 minutes (depends on how thin you cut them). It should be easily punctured with a fork when it is done.
While I was waiting for them to bake, I decided that fried eggs are always a good idea..
